My fertility clinic have referenced FSH as a guideline to possible success.  Does anyone know how a mans FSH changes according to fertility? What is a 'normal' FSH level?

Yes your fertility clinic has refered to FSH as a guideline to possible success.

Usually it is the female who gets all the attention as to her FSH (which at best will be low - below 10), however to start from the begining for other members who may not be to familiar with this term:
FSH is the Follicle Stimulating Hormone and is produced by the pituitary gland.
The test is usually done to determine which fertility treatment may be appropriate for the female and the male. (However there are a number of other none fertility diagnostic reasons why this may be done).
The test is done by taking a small amount of blood from one's arm with a needle. The blood is then sent to the lab for analysis.

The normal range of FSH depends on age. For men the levels range from 5 to 20 mlU/ml., with the ideal being 5 for reproduction.

Other hormone tests are done with the FSH test. The results of the different tests are interprited together to make one diagnosis. For men, FSH is measured along with the blood level of the hormone testosterine.

There are many reasons why FSH results may be outside the normal range from diet and lifestyle, (as mentioned) age, to certain ailments, if this is the case your clinician will advice.
